Is it Really Ice Cream?: Yes, it is regular neopolitan ice cream. How Does it Taste?: Crunchy with a texture like a Whopper malted milk ball however, once you place it in your mouth, it quickly dissolves, melts, in your mouth. Just a quick note, due to the freeze-drying process and shipping, ice cream bars typically do not arrive in one piece but are "broken" into smaller chunks for easy sharing. Trivia: How Do They Freeze Dry Ice Cream?: The process is quite amazing how they actually go about turning a regular ice cream bar into freeze dried ice cream. It goes through a journey much like outer space. Our freeze dried ice cream begins with real ice cream which is frozen solid to about 40 degrees F below zero. It is then placed in a large "space" vacuum chamber. An vacuum is drawn from the chamber (just like in outer space) and a small amount of heat is applied (between 100 degrees -130 degrees ). As this is done the frozen moisture from the ice cream is vaporized and goes from the frozen state to the dry state without going through the melted liquid state. Thus, freeze-dried. This process in physics is call "sublimation." The result is an ice cream bar that is the same size as the original but only the water crystals have been removed. The natural taste, flavor and nutrients are all preserved. With the moisture removed, it weighs almost nothing! It's then packaged in a special moisture/oxygen barrier foil bag.
